Mystic Cranberry Gravy

1/2 c. sweet onion, minced
1 tsp. all-purpose flour
3/4 cup low-sodium chicken broth or turkey pan drippings
1/2 cup Mystic
1/3 cup dried cranberries
1/2 tsp. minced fresh thyme
1 tbsp. (plus 1 tsp.) unsalted butter, chilled
1½  tsp. red wine vinegar
1 tsp. lemon juice
Salt & Pepper to taste

Melt 1 tsp. butter over medium heat.

Cook onion until soft (about 2 minutes), add flour and stir constantly as it cooks for 30 seconds.

Whisk in broth.

Add Mystic, cranberries and thyme and bring to vigorous simmer.  Cook until reduced to about 3/4 of a cup (about 6-7 minutes), stirring every minute or so.

Remove from heat. Whisk in 1 tbsp. chilled butter, then add vinegar and lemon juice.

Season with salt and pepper to taste.

Note: if serving alongside a turkey, you may want to double the recipe.
